Description
Another recipe from my Great Grandmothers Cook Book. They were quite easy to make and I rate them a 3 out of 5 difficulty.
Strawberry Buttons
Ingredients
8oz plain flour
3oz whipped-fat (I used butter)
2 ½ oz sugar
Grated rind of 1 lemon
1 egg
1 tablespoon milk
Little desiccated coconut
Strawberry jam
Separate yolk from white of egg.
Rub fat into sieved flour.
Stir in sugar and lemon rind and bind with egg yolk and milk.
Roll into tiny balls.
Dip each ball into egg white and roll in coconut.
Place not too closely together on a greased and floured baking sheet.
Make a dent in each ball with fingertip.
Bake near top of a moderately hot oven (400 °F - gas mark 5) for 15-20 minutes.
While still hot, place a little strawberry jam in each dent.
Cool on wire rack.
These tasted ok. They are like little round coconut biscuits. My Mum took the photo as I wasn’t too happy with how they turned out.
